Good morning friends! In this video I’m sharing a realistic full day of food for our family of seven—breakfast, lunch, dinner, and a couple snacks—while we’re also doing homeschool and just living regular life at home. For breakfast we all had large flake oats, and I’ll show you how I like to make mine a little more filling by stirring in whey protein isolate (you hardly notice it) plus cottage cheese and berries. The kids usually do their own toppings—peanut butter is the favorite, and some of them add raisins, cinnamon, or fruit. Lunch was very much a “use what we have” kind of day because I had just gotten back from visiting my sister, so I was figuring out what leftovers were in the fridge. The kids had warmed-up Annie’s mac and cheese, sourdough bread with melted cheese, veggies, grapes, and a few boiled eggs. I made myself a loaded baked potato bowl with Greek yogurt, cheese, bacon bits, broccoli, and pepper—and it actually kept me full. For dinner, I pulled together a cozy white chicken chili on the stovetop using leftover cooked chicken, my homemade chicken stock, kidney beans (because that’s what I had), and then I finished it with sour cream and heavy whipping cream. Simple, warm, and perfect for a cold day.
