Good morning, friends! In this full day of eating, I’m sharing what I actually feed our family of seven on a really busy day—healthy, homemade, but still realistic. We’re usually eating at home (meals out aren’t very common for us), so I’m always trying to keep things simple and doable. I start my morning with my go-to oatmeal: I add cottage cheese (I love it in oatmeal), fresh strawberries I sliced the night before, maple syrup, and a splash of milk—plus my much anticipated morning coffee. Because we had five dentist appointments and swimming lessons, I needed lunch at noon and dinner basically ready to go for when we got home around 6:00. For dinner, I made a ham and potato soup in the Instant Pot using leftovers—leftover ham and leftover mashed potatoes (with smoked paprika in them), plus onion, garlic, homemade chicken stock, and a little half and half. I used my immersion blender to make it creamy, then added chopped ham and a few fresh diced potatoes so we’d still have some chunks. Lunch was freezer sourdough waffles toasted up with peanut butter, syrup, and bananas, and later I grabbed an apple and a mint Builder’s protein bar. We finished the day with soup, sourdough toast, carrot sticks, and a cherry bubbly.
