In today’s full day of food at home, I’m taking you along from breakfast all the way through dinner (plus the little snacks and sips in between). For breakfast, I kept it simple and cozy with toasted sourdough cinnamon raisin bread with butter and honey, Greek yogurt with whey protein mixed in for extra protein, and a banana. I’m also trying something new—eating a little bit before my morning workout (even when I don’t feel like it) because I think it helps my body and possibly my workout performance. And of course, I’m drinking water with my meals. For lunch, it was very much a “use what we have” kind of day since it was grocery day. I warmed up leftover chicken noodle soup (with the Costco rice noodles we love), and I made chicken salad with mayo, mustard, salt and pepper—plus grapes and apple for that sweet crunch. We served it with some freezer dinner rolls and whatever extra fruit and veggies we had. After we wrapped up school, I batch-prepped 4 pounds of meatballs (no fillers—just beef, salt, pepper, and garlic powder), baked them, and froze half for an easy future dinner. Dinner was sweet and sour meatballs with Instant Pot rice and broccoli, and I ended the day with mint tea and a little honey for my sore throat.
