Hey y’all! In this What’s for Dinner video I’m sharing four easy, budget-friendly dinners I’ve been making for my family of four lately—real life meals with simple ingredients and big flavor. I start with a cozy Crock-Pot Korean beef using a chuck roast I grabbed on sale at Kroger (because I only buy chuck roast when the price is right). It cooks low and slow all day, then I thicken the sauce with a quick cornstarch slurry and serve it over rice with roasted broccoli—so tender, and the leftovers make the best lunches. Next up are Swedish meatballs that turned into a new family favorite. I use a ground beef and pork blend I found for a great price, bake the meatballs, and then toss them in the creamiest sauce made with a browned butter/flour roux, beef broth, heavy cream, Dijon, and Worcestershire. Then I’m making one of our most-requested air fryer meals: BBQ chicken legs with crispy skin and juicy meat, finished with a little Kinder hickory brown sugar sauce (or left plain for picky eaters). And last, I tried an old cookbook recipe that I’d call a chicken and stuffing casserole—Swiss cheese, cream of chicken soup, a splash of white wine, and buttery herb stuffing baked right on top. Cozy, easy, and everybody ate it up.
