Hey y’all! In today’s What’s for Dinner, I’m sharing five easy and delicious dinner ideas that are quick cook-time and super low effort—perfect for those nights when you’re busy or you just don’t feel like standing in the kitchen for hours. I’m all about having a few go-to recipes you can pull out anytime, and every one of these is budget friendly and family approved. I start with fish sliders using crispy battered fish fillets and soft Hawaiian rolls (I really prefer the pre-sliced slider buns, but I made what I could find work). I add American cheese, a little shredded lettuce, and tartar sauce—because if I’m eating fish, I have to have tartar sauce. Then I make chipotle chicken paninis on sourdough with my favorite store-bought chipotle sauce (the Cholula one is the best I’ve found), rotisserie chicken, bacon, tomato, and cheese—plus chips and a pickle on the side. I also show my super fast Instant Pot goulash (a family favorite that reheats great), a quick homemade sausage tortellini Alfredo, and a woodfired Frito chili pie with cream cheese and Kinder’s woodfire chili seasoning that really made it stand out.
