You can definitely tell my cooking is starting to shift with spring coming in, and these meals are perfect if you need weeknight motivation without spending a fortune. I walk you through each one step-by-step so you can see exactly how I make it and how I stretch ingredients in a realistic way. We’re making Taco Bell-style Mexican Pizzas (even though I’ve never ordered them there), and my family absolutely loved them—one pound of taco meat is a good rule of thumb for four pizzas. Then I’m doing Crock-Pot garlic butter steak bites and potatoes that will make your whole house smell so good, plus sheet pan chicken fajitas that are extremely simple and great for busy nights (and honestly would be perfect for meal prep). I also make a country fried pork cube steak dinner because it’s cheaper than cubed beef and always comes out tender, with an easy homemade gravy. And we finish with my tortellini Alfredo—rich, garlicky, and one of my favorite meatless dinners (with garlic knots on the side).
