In this video I’m making 3 quick, easy, and seriously delicious 100% plant-based toast ideas—perfect for those cozy minimal days when you want maximum flavor with minimal effort. I start with my go-to chickpea “mock chicken salad” toast. It’s made with garbanzo beans, plant-based mayo, mustard, red onion, jalapeño (pickled or fresh), lemon juice, and a bunch of seasonings. Nutritional yeast is key here because it adds that cheesy, nutty vibe, and I love going heavy on spices to get a lot of bang for your buck. I make this one three to four times a week because it’s that easy. Next is a Mediterranean-inspired tomato, onion, and cucumber toast. I dice everything up, mix it with lots of lemon juice and spices (cumin is a must for me), and let it sit so the flavors melt together—especially if you chill it in the fridge. I spoon it over a thick layer of hummus on toast for a bright, tangy, savory bite. And to finish, I share a sweet toast: nut butter + banana coins + chopped walnuts + dates, topped with cinnamon (or pumpkin pie spice if you’re feeling extra fancy).
