I start with a small pour over ice and do a quick taste test with my usual honest approach—no fluff, just what I’m getting on the nose and palate. Right away, the smoky hit is pretty strong, and for me it leans into this seaweed-y, savoury vibe that I’m not super into. Then I pull the bottle from the freezer and pour it cold (even the glass gets condensation). Freezer-chilled changes the experience a lot: the peatiness feels reduced, but the seaweed/savoury notes become more obvious, and it even comes across a little salty to me. The upside is it drinks much smoother and fuller, and both of us end up preferring the frozen version. Bottom line: if you’re not a peat whisky person like us, freezing Shinobu might be the better way to tame the smoke—just be prepared that the savoury/seaweed character can stand out more.
