Hey friends! In this video I’m taking you along for a full week of dinners and sharing what we actually ate as a big homeschooling family of seven. These are cozy, realistic winter meals—more “thrown together” than perfectly measured recipes—because a lot of the time I’m making things I’ve cooked for years and I don’t even follow a recipe anymore. I share what worked, what I’d tweak, and how I stretch meals so we can enjoy leftovers for lunch in the middle of our school day (which makes homeschool life so much easier). We start the week with a slow cooker chili that my 14-year-old daughter made (which is such a win in this season of life), then we do Instant Pot bone-in pork chops with roasted potatoes and raw veggies. Midweek is a simple taco bar with rice, chips, and all the toppings, and then one of our favorites: my “loaded baked potato” style Instant Pot meal with layered potatoes, onions, bacon, and cheese (plus sour cream—yes, we bought more).
