In today’s “what my family of 7 eats in a day,” I’m sharing a real-life, at-home full day of meals—breakfast, lunch, snacks, and dinner—while we’re also doing homeschool and just living regular large family life. I started my morning with one of my go-to breakfasts: three fried eggs with bacon and pepper, plus plain Greek yogurt mixed with whey protein isolate and a little maple syrup. I also worked out, added creatine to my water for recovery, and then—because it always comes next—made coffee. This day was a slower one because I felt a migraine coming on (that aura in my vision makes it obvious), so I took something right away, set the kids up with math, and laid down for about an hour. Lunch was thankfully super simple: fresh homemade bread with leftover egg salad and tuna salad, plus a big mountain of raw veggies that we snack on all afternoon. Later I made my favorite high-protein snack—cottage cheese with canned pineapple (and yes, I add a bit of the juice). For dinner, we switched plans and did chili on the stovetop instead of the slow cooker, with my daughter helping prep. We always serve chili with cheese and sour cream (must-haves), plus crackers on the side, and I shared how I stretch leftovers with rice or pasta. We finished the day with chocolate chip squares for dessert—easy, cozy, and perfect for a family of seven.
