Hey friends! In this video I’m sharing a realistic full day of food for my family—breakfast, lunch, dinner, and my little evening snack. I’m a big believer in keeping things simple but still nourishing, especially in a busy homeschool and homemaking rhythm. I start the day with a protein-packed breakfast (most days it’s three fried eggs in butter with real bacon bits, plus Greek yogurt with protein isolate and a little maple syrup). I work out first thing, so getting that protein in really helps me stay full and feel replenished. For lunch, I lean on leftovers—because that’s what makes large family life doable. I warm up leftover chili and we do a little “make-your-own” situation with grated cheese, sour cream, and my sourdough crackers (I make big batches of those regularly). We even have a little dessert after lunch with sourdough apple coffee cake I made to use up extra apples and sourdough. Dinner is an easy taco salad bar: rice in the Instant Pot (I use chicken stock + water), ground beef with onions, black beans to stretch the meat, and homemade taco seasoning. We top it with cheese, a salsa + sour cream mix, raw onions, tomatoes, and blue corn chips—no lettuce this time because it was so expensive, so I just pulled out extra veggies instead. I end the day with one more coffee and popcorn popped in coconut oil with salt and nutritional yeast.
