Thanks for keeping our wheels turning! 💛 Vancaskeys LLC | All rights reserved BOB'S ONE PAN MEXICAN SKILLET: Ingredients: 6–8 oz lean ground beef 1 Tbsp olive or vegetable oil ½ cup diced onion ½ cup diced bell pepper 1 clove garlic, minced ½ cup long-grain white rice 1 cup broth (chicken or beef) 1 cup diced tomatoes (with juices) 1–2 tsp taco seasoning Salt & pepper to taste ½ cup black beans, rinsed ½ cup corn ¼ cup shredded cheese Optional: sour cream, cilantro, jalapeño, avocado, lime Instructions: 1. Brown beef in oil over medium-high heat, 5–7 min; drain. 2. Add onion, pepper, garlic; cook 3–5 min. 3. Stir in rice and seasoning; toast 1 min. 4. Add broth and tomatoes; bring to a boil, then cover and simmer 15–20 min until rice is tender. 5. Mix in beans and corn, top with cheese, cover 2–3 min to melt. 6. Serve hot with your favorite toppings.
