Simple sponge recipe: 4oz Self raising flour 4oz sugar 4oz butter 2 eggs 1tsp vanilla essence 1tsp baking powder Drop of milk Whisk everything together to form a smooth mixture. Add milk if it’s too thick. Bake in a cake tin at 180 degrees for about 20-25 minutes. Or make as cupcakes and bake for 12-15 minutes. I covered mine with raspberry jam and desiccated coconut.
