The sausages can be frozen for up to 3 months. Roast potatoes: We use Maris Piper potatoes, plain flour and vegetable oil - Peel and cut potatoes to desired size - Place in salted boiling water, boil for 8 minutes - Drain and toss in the pot or colander to rough up the the sides - Add flour, shake, season and shake again. About This Video

In this video I’m doing a huge Christmas prep because we’re basically hosting three Christmas days: one with my friends, one with Matt’s friends, and then Christmas Day itself. To survive it (and actually enjoy it), we meal prep loads ahead of time—pigs in blankets, roast potatoes, carrots and parsnips, a creamy Brussels and bacon dish, and even homemade gravy. I show you exactly how we parboil, cool everything properly, freeze it so it doesn’t turn into one giant block, and then on the day you can just cook it as normal in the oven with your usual oil, seasoning, honey and butter. I also take you through the kind of pre-guest clean that makes the whole downstairs feel reset—steaming a stain out of our Christmas rug with my Bissell, Matt sorting the fireplace, and then a proper vacuum after moving furniture around (there were crumbs everywhere). We also lift the glass off our dining table to clean underneath and try a new table runner idea with wrapping paper under the glass, which looks so effective. And because it’s not Christmas without a bit of chaos and fun, I share the simple party games we’re playing, plus easy food ideas for a crowd—quesadillas for the kids, a festive candy cane caprese, and our “cheat” sweetie grazing platter that always goes down so well.
