Fry bacon until crisp; remove from skillet. Add vinegar, salt, and chili powder to bacon fat; add diced potatoes; heat thoroughly. Turn onto heated platter, garnish with crisp bacon. Serve hot. BAKED CHILES RELLENOS (BH&G Cooking Mexican, pg. 57) 3 large poblano peppers or green bell peppers 6oz Monterey Jack cheese 4 beaten eggs 1/3c milk 1/2c all purpose flour 1/2tsp baking powder 1/4tsp salt 1 additional cup shredded Monterey Jack Cheese Halve peppers lengthwise and carefully remove stems, seeds, and veins. Fill each pepper half with cheese, cutting cheese into pieces to fit (I shredded mine). Place fill pepper halves, cut side up, in a well greased 10 x 6 x 2 inch baking dish (I used an 8 x 8 dish). In a medium mixing bowl, combine eggs and milk. Add flour, baking powder, and salt. Beat with a rotary beater until smooth. Pour egg mixture over peppers. Bake, uncovered, in a 45 oven for 15 minutes. Sprinkle with additional shredded cheese. MANZANA ASADO (Baked Apples, Authentic Mexican Recipes, pg. 48) 6 apples 1/2c dates 1/4c pecans 2Tbsp butter 1c honey cider Core apples about 3/4 of the way through. Melt the butter, mix in the pecans and the dates. Fill each apple with this mixture. Thin the honey with a bit of cider and pour it over the apples. Bake in a 350 degree oven for about 1 hour. Baste often with the honey and cider mix.
