Fix-It and Forget-It Cooking for Two (2017) ------------------------------ PATREON: https://www.patreon.com/CookingAllTheBooks INSTAGRAM: instagram.com/_cookingthebooks_ FACEBOOK: https://www.facebook.com/cookingallthebooks WEBSITE: https://www.cookingthebooks.net/ ------------------------------ APPLE SAUCE HONEY PORK CHOPS (pg 149) 12oz pork loin chops onion powder, to taste black pepper, to taste 1/4c apple sauce 1/8c honey Season both sides of the chops with onion powder and black pepper. In a frying pan sear the chops on both sides. Add the chops to the crock with any drippings. Mix together the apple sauce and honey and then pour over the top of the chops. Cover and cook on low for 4 hours. CHEESY BROCCOLI & CAULIFLOWER (pg 231) 2 eggs 1 Tbsp cornstarch 1c shredded cheddar cheese, divided 1/4c cottage cheese 1/4 tsp salt 1/4 tsp onion powder 1/4 tsp garlic powder 1/8 tsp pepper 3/4c chopped cauliflower florets 3/4c chopped broccoli florets 1/4c chopped onion Spray crock with nonstick spray. In a bowl, mix together the eggs, cornstarch, 3/4c of the shredded cheddar cheese, cottage cheese, salt, onion powder, garlic powder, and pepper. Stir the cauliflower, broccoli, and onion into the cheese mixture. Pour this into the crock. Cover and cook on low for 2 1/2 to 3 1/2 hours. Sprinkle the remaining 1/4c of shredded cheddar cheese over teh top of the contents of the crock 10 minutes before serving and re-cover. CHICKEN TACO CHILI (pg 119) 1/2c canned black beans, drained and rinsed 1/2c canned cannellini beans, drained and rinsed 4oz boneless, skinless chicken breast, diced 3/4c salsa 1/2 jalapeño pepper, seeded and diced 1/2c corn kernels 1/4c chopped red onion 4oz tomato paste 1 tsp chili powder 1 tsp cumin 1 tsp salt 1/2 tsp oregano 1/4 tsp pepper 4c chicken stock or broth (note: I would reduce this to 2 cups!) place all ingredients into the crock.
