Cook green peppers gently in butter 3 or 4 minutes, or until wilted. Add tomatoes and salt and pepper to taste; heat until boiling. Break 2 eggs into each buttered individual baking dish (or 10" x 6" x 2" baking dish). Spoon boiling tomatoes over and around eggs (exact amount you need to use will depend on size and shape of baking dish. Tops of yolks should barely show through sauce). Sprinkle with cheese and more salt and pepper. Bake 10 to 15 minutes at 400 degrees F, or until eggs are as firm as desired. Serve on or with toast. FRIDAY NIGHT SPECIAL (pg 37) 4 slices 2 or 3 day old bread 1/4lb processed cheese 2 Tbsp minced onion 1/2 tsp salt 1/4 tsp paprika (I used smoked paprika) 1/8 tsp dry mustard 2 eggs 1 1/2c milk Start heating oven to 350 degrees F. Cut bread slices into uniform rectangles, squares, or triangles. In well greased 1qt casserole, arrange half of bread, then cheese; sprinkle with onion salt, paprika, mustard; then add rest of bread. Beat eggs and milk together; slowly pour over casserole mixture. Set casserole in pan of hot water. Bake 40 minutes or until puffy and knife inserted in center comes out clean. QUICK BACON SPAGHETTI (pg 50) 1/2lb bacon slices cut into squares 1/2c chopped onions 1 chopped green pepper 1/2lb spaghetti, broken 1 1/2c boiling water 3 1/2c canned diced tomatoes 1/2 tsp salt 1 Tbsp Worcestershire Grated Parmesan Cheese In large skillet, cook bacon, onions, and green pepper about 5 minutes, or until lightly browned. Add uncooked spaghetti, water, tomatoes, salt. Simmer, covered, 20 minutes, or until spaghetti is tender. Stirr occasionally with for; add a little hot water if mixture becomes dry. Stir in Worcestershire.
