Exciting World of Rice Dishes (1959 Minute Rice cookbook) CurrentMinute Rice Porcupine Meatballs https://minuterice.com/recipes/porcupine-meatballs/ STEM Soaps https://stemsoaps.com/ ------------------------------ PATREON: https://www.patreon.com/CookingAllTheBooks INSTAGRAM: instagram.com/_cookingthebooks_ FACEBOOK: https://www.facebook.com/cookingallthebooks WEBSITE: https://www.cookingthebooks.net/ ------------------------------ MINUTE RICE MEATBALLS 2/3c Minute Rice 3/4lb ground beef 1/3c water 1 tsp grated onion 1 1/4 tsp salt Dasy of pepper 8oz tomato sauce 1/2c water Combine Minute Rice, ground beef, 1/3c water, onion, salt, and pepper. Stir lightly until well mixed. Shape into 12 small balls. Place in skillet or saucepan. Add tomato sauce and 1/2c water. Cover tightly and simmer 10 minutes. Remove from heat and let stand 5 minutes. Makes 4 servings. ONION PILAF 1 pkg onion soup mix 3c boiling water 1 1/3c Minute Rice 1/4 tsp salt Dash of pepper 1 Tbsp chopped parsley Stir onion soup into boiling water in saucepan. Cover; boil 10 minutes. Add Minute Rice, salt, and pepper. Mix just to moisten all rice. Bring again to a full boil, cover, remove from heat, and let stand 5 minute. Add parsley, mixing lightly with a fork. Serves 4. HAWAIIAN SUPPER 2 1/2c slivered ham 1/2c chopped green pepper 2 Tbsp butter 1 1/3c pineapple juice (and water if you don't have quite enough juice) 2 to 4 Tbsp vinegar 2 Tbsp brown sugar 1/2 tsp dry mustard 1/2 tsp salt Dash of pepper 2 Tbsp cornstarch 2 1/3c drained pineapple chunks 1 1/3c hot water 1/2 tsp salt Dash of pepper 2 tbsp chopped scallions or chives 1 1/3c Minute Rice Sauté ham and green pepper in butter until lightly browned. Combine liquid, vinegar, brown sugar, mustard, 1/2 tsp salt, pepper, and cornstarch, mixing well. Add to ham; cook and stir until sauce is thickened and transparent. Add pineapple. Combine water, 1/2 tsp salt, pepper, scallions or chives, and Minute Rice. Pour into center of sauce. Bring to a boil, cover and simmer for 5 minutes or until rice is soft.
