Combine salad dressing or mayonnaise, curry powder, 1/4 tsp salt, and dash pepper; stir into turkey mixture. Spread one side of each toast slice with margarine or butter. Arrange on a baking sheet, margarine side up; divide and spoon turkey mixture over toast. Broil 4 to 6 inches from heat for 4 to 5 minutes or until heated through. Spinkle with paprika, if desired. CHEESY BROCCOLI BAKE (pg 57) 6oz medium noodles 1 - 10oz package frozen chopped broccoli or spinach 1 1/2c cottage cheese 1c sour cream 1/2c grated parmesan cheese 1 beaten egg 1/4c milk 1 tsp salt 1/2 tsp dried basil, crushed 1/2 tsp dried thyme, crushed 1/4 to 1/2 tsp bottled hot pepper sauce 1/4c fine dry bread crumbs 1 Tbsp butter or margarine, melted snipped parsley Cooke noodles according to package directions; drain well. In saucepan, cook chopped broccoli or spinach in boiling salted water. Drain well, pressing out extra liquid. In large mixing bowl stir together broccoli or spinach, cottage cheese, sour cream, parmesan cheese, beaten egg, milk, salt, basil, thyme, and hot pepper sauce. Add cooked and drained noodles; mix well. Turn noodle-cheese mixture into an ungreased 2 qt casserole. Toss together dry bread crumbs and melted margarine or butter. Sprinkle atop casserole. Bake in 350 oven about 45 minutes or until heated through. Garnish with parsley if desired. CHEESY MEAT LOAF 1 beaten egg 1/4c ketchup 1c shredded Swiss, American or process cheese spread (4oz) 3/4c bread crumbs (1 slice of bread) 1/2c finely chopped onion 1/4c finely chopped green pepper 3/4 tsp salt 1/2 tsp dried thyme, crushed 1/8 tsp pepper 1lb ground beef or ground pork Combine egg and ketchup; stir in cheese, bread crumbs, onion, green pepper, salt, thyme, and pepper. Add ground beef or pork; mix well. In 11 x 7 1/2 x 2 inch baking dish shape meat mixture into a 6 inch round loaf. Bake in 350 degree oven for about 1 hour or until done.
