Blending remaining ingredients; pour over potato mixture. Toss lightly. Serve at room temperature. Makes 4 to 5 servings. FRUIT AND ORANGE FLUFF (pg 6) 1 - 3 3/4 oz package vanilla pudding mix 2c cold milk 1c sour cream 1/2 tsp grated orange peel 1/4c orange juice Assorted fruit To prepare dressing, slowly baet pudding mix and milk in mixing bowl with rotary beater until well blended, about 1 to 2 minutes. Gently peat in sour cream. Fold in orange peel and juice. Chill. To serve, center small bowl of dressing in large shallow bowl. Arrange fruits around. To keep cold, place fruit bowl atop bowl of crushed ice. Makes 3 cups of dressing. AVOCADO CREAM DRESSING (pg 135) 1 medium ripe avocado, peeled and mashed 1/2c sour cream 2 Tbsp milk 2 tsp lemon juice 1/2 tsp salt 1/4 tsp dried chervil leaves, crushed (I used tarragon instead) Dash of onion powder 2 drops bottled hot pepper sauce Combine all ingredients; chill. Serve with tomato or lettuce wedges.
