Gradually stir in the sugar and cream until smooth. Remove from heat. Whisk in egg yolks and vanilla. Pour into small individual dessert dishes. Chill. Serve with whipped cream. Serves 4. MEAT LOAF (pg 74) 1/2lb ground beef or veal 1/4lb ground pork 1 1/2 medium slices soft bread torn into pieces and1/2c milk OR 1/2c dry bread crumbs and 2/3c milk 1 egg, beaten 2Tbsp minced onion 1/2tsp salt 1/4tsp each pepper, dry mustard, celery salt, and garlic salt 1 1/2tsp Worcestershire sauce Heat oven to 350. Mix all ingredients thoroughly. Shape into 2 loaves in shallow baking pan. Spread with ketchup or barbecue sauce. Bake 1 hour, until done. 4 servings. Serve on loaf hot, serve the other cold for another dinner. EASY CREAMED SPINACH (pg 74) 5oz frozen spinach, partially thawed 2Tbsp butter 2Tbsp flour 1/8tsp salt pinch of pepper 1/2c milk 1/8tsp nutmeg Melt butter in double boiler. blend in flour and seasonings (except nutmeg). Cook over low heat, stirring until mixture is smooth and bubbly. Remove from heat. Stir in milk. Bring to boil, stirring constantly until thickened. Add spinach and nutmeg.
