Add rice; cover and remove from heat. Let sit for 5 minutes. Melt butter in skillet; saute onion and celery until tender. In large mixing bowl, combine rice, celery and onion with remaining ingredients. Pour into a greased 1 1/2qt casserole. Bake at 350 for 1 hour. makes 6 servings. TAFFY APPLE DIP (pg 15) 1 - 8oz pkg cream cheese, softened 3/4c brown sugar 1Tbsp vanilla extract 1/2c chopped peanuts 6 apples, cut into wedges In a small bowl, beat cream cheese, brown sugar and vanilla until smooth. Spread mixture on a small serving plate; top with nuts. Serve with apple wedges. BUTTERY PEAS AND ZUCCHINI (pg 13) 1 package (10oz, I could only find 8oz) frozen peas in butter sauce 2Tbsp water 1 medium zucchini, cut into thin strips 1Tbsp diced pimiento Cook peas according to package directions. Pour into serving bowl, cover with plastic wrap and set aside. Meanwhile, in skillet, simmer water and zucchini over medium heat until water is evaporated and zucchini is tender.
