Place, toasted side down, on baking sheet. Top each with 3 lengthwise halves of frankfurters, then cheese slices and tomato slices. Broil until cheese bubbles. OATMEAL RAISIN BREAD (pg 9) 2c all purpose flour 2tsp baking powder 3/4 tsp baking soda 1 1/2tsp salt 1c uncooked rolled oats 1c seedless raisins 1/3c shortening 1/3c brown sugar, firmly packed 1 egg, beaten 1 1/4c buttermilk Start heating oven to 350. Sift together flour, baking powder, soda, and salt. Add oats and raisins. Cream together shortening and brown sugar until light and fluffy. Add egg and buttermilk. Add milk mixture in thirds to flour mixture, stirring until blended after each addition. Place in greased 9 x 5 x 3 inch loaf pan. Bake for 1 hour or until done. OPEN CLUB (pg 51) 4 English muffins, split 3/4c grated process cheddar cheese 1/3 thinly sliced scallions or chopped onions 3/4c chopped ripe olives 1/3c mayonnaise or cooked salad dressing 1/2tsp curry powder Tomato wedges On baking sheet, arrange muffins then toast in broiler In bowl, combine cheese, scallions, olives, mayonnaise, and curry powder. Use to top muffins, then run under broiler until cheese melts.
