Cut a very thin slice from the top of each potato. Remove the pulp from the potato, being careful not to tear the shells. Crumble potato pulp 2. Combine the potato with mayonnaise. Add the crumbled bacon, tomato, and lettuce. Toss thoroughly. 3. Stuff back into potato shells CHICKEN TARRAGON STUFFED SPUD (pg 71) 1/4c chopped walnuts 2 baked potatoes 1/4c mayonnaise 1/2c sour cream 1/2tsp salt 1 tsp tarragon, crushed 1c chopped cooked chicken 1. Toast walnuts in a 35 oven for 8 to 10 minutes, or until golden brown (I did this in a ban on the stove top for 3 to 5 minutes). Watch them carefully as they burn easily. Set aside. 2. Cut a thin slice from the top of each potato. Remove the pulp from the potatoes, being careful not to tear the shells. Place the potato pulp in a bowl and mash. Keep the shells warm. 3. Add the mayonnaise, sour cream, salt, and tarragon to the mashed potatoes and mix thoroughly. Add the chicken and toasted walnuts, reserving enough of the walnuts to sprinkle over the tops for garnish. 4.Heap the mixture into the potato shells. Bake in a 350 degree oven for 15 minutes. Garnish with the reserved walnuts before serving. HAM QUICHE SPUD (pg 97) 2 baked potatoes 1 Tbsp butter 1/4c chopped onion 1/2c sour cream 2 eggs, lightly beaten 1/8tsp salt 1/8 tsp black pepper 3/4c 1/4 inch cubes of Swiss cheese 1/2c chopped cooked ham 1. Cut a thin slice from the top of each potato. Remove the pulp from the potatoes, being careful not to tear the shells. Place the potato pulp in a mixing bowl and mash; cover and set aside. Set the shells aside. 2. Heat the butter or margarine in a skillet. Add the onion and cook over low heat until tinder, about 10 minutes. Add the sour cream, lightly beaten eggs, and the salt and pepper, stirring constantly. Add mashed potatoes and mix well. Add cubed Swiss cheese and chopped ham and mix lightly. 3. Heap the mixture into the potato shells.
