Then, generously butter the dish. Peel potatoes and cut into 1/8" slices. Place sliced potatoes in 3 or 4 quart saucepan and add half and half, salt, pepper, and hot sauce. Stir to combine. On stove, bring to a gentle simmer and cook for 15 minutes, stirring occasionally. Once potatoes have softened, pour mixture into prepared baking dish. Smooth top with spatula. Sprinkle evenly with dry bread crumbs, then dot with butter pieces. Sprinkle with cayenne pepper if desired. Top evenly with shredded cheese. Bake in a preheated 350 degree oven for 50 to 60 minutes. Let stand at least 15 minutes before serving. LOADED POTATO SALAD 1c sour cream 1/2c mayonnaise 1/2oz to 1oz Hidden Valley Ranch seasoning 2lbs potatoes (Russet or Yukon Gold) 6oz shredded cheddar cheese 3 to 3 1/2oz cooked and crumbled bacon 1/2c sliced green onions To prepare dressing, combine sour cream, mayonnaise, and Hidden Valley Ranch seasoning. Whisk together and set aside. Wash and peel potatoes and cut into large chunks. Place in 4qt saucepan and cover with water by 1 to 2 inches. Salt the water and bring to a boil. Cook for 15 to 20 minutes. When potatoes are easily pierced with a fork, drain and let them cool slightly. Place cooked potatoes in a large bowl. Add desired amount of dressing (remember, some of the dressing will absorb into the potatoes as they sit) and gently combine. Add most of the cheese, bacon, and green onion, setting a small amount of each aside for garnish. Gently combine. Refrigerate for at least 1 hour, preferably several hours or overnight.
