Place the spinach in a large salad bowl. Just before serving, pour the dressing over the spinach and toss gently. Garnish with crumbled bacon and egg slices. 6 to 8 servings. ZESTY POTATO SALAD (pg 30) 2lbs red potatoes 1/2c mayonnaise 1/2c sour cream 2Tbsp prepared horseradish 1Tbsp chopped fresh parsley 1/2tsp salt 1/2tsp pepper 3 bacon strips, cooked and crumbled 4 hard cooked eggs, chopped 2 green onions, sliced Peel potatoes; cook in boiling salted water for 20 minutes or until tender. Drain and cool. Cut potatoes into cubes, In a large bowl, combine mayonnaise, sour cream, horseradish, parsley, salt and pepper; mix until smooth. Stir in potatoes, bacon, eggs, and onions. Cover and chill up to 24 hours. 6 servings. QUICK VEGETABLE SALAD (pg 25) 1 can (16oz) whole kernel corn, drained 1 large tomato, seeded and chopped 1/2c chopped celery 1/2c chopped cucumber 1/3c finely chopped green pepper 1/4c finely chopped onion 1/4c sour cream 2Tbsp mayonnaise 1Tbsp cider vinegar 1/4tsp salt, optional 1/4tsp celery seed 1/8tsp pepper In a large salad bowl, combine corn, tomato, celery, cucumber, green pepper and onion. In a small bowl combine the remaining ingredients; gently blend into salad.
