Add beans, tomato, and onion; mix well. Chill 3 to 4 hours before serving. Serve in lettuce cups. PIZZA BURGER FOR TWO (pg 83) 1 - 3/4" slice from large round loaf of white bread OR 2 hamburger buns, split 1/2lb ground beef 2Tbsp grated Parmesan cheese 2Tbsp finely chopped onion 2Tbsp chopped ripe olives 1/2 tsp salt 1/2 tsp dried oregano 1/4c ketchup 1 to 2 slices mozarella cheese, cut into 1/2" strips cherry tomatoes, halved Toast bread or buns. Combine meat with next 6 ingredients and a dash of pepper; blend. Spread mixture on toasted bread. Broil 5 inches from heat for 8 minutes or until done. Add cheese and cherry tomato halves; broil until the cheese begins to melt, about 1 minute. Trim with cherry tomato and ripe olive. PEANUT BUTTER PARFAITS (pg 20) 1c brown sugar 1/3c milk 1/4c light corn syrup 1Tbsp butter or margarine 1/4c peanut butter vanilla ice cream Peanuts OR crushed peanut brittle In medium saucepan, combine brown sugar, milk, corn syrup, and butter. Cook an stir over medium heat until sigar dissolves and butter melts; remove from heat. Add peanut butter; beat smooth with rotary beater or whisk; cool. In parfait glasses, alternate layers of vanilla ice cream and peanut butter sauce, beginning and ending with ice cream. Garnish parfaits with peanuts or crushed peanut brittle, if desired.
