If you're looking for new ways to prepare dried beans, you gotta give these Slow Cooker Pizza Beans a try! I love trying dried bean recipes, and this one is a keeper. This is the updated version of the slow cooker I used: https://amzn.to/3NLtRLS ------------------------------ Pizza Beans (from Crockery Cookery, 1975) 1lb dried pinto beans 6c water 4 medium tomatoes, peeled and diced (I used a can of fire roasted diced tomatoes) 1 onion, chopped 1/4c chopped green pepper 1 clove garlic, crushed 2tsp salt 1/2tsp dried oregano leaves 1/4tsp rosemary, crushed 1c shredded mozzarella cheese 1/4c grated Romano or Parmesan cheese Soak beans in water overnight. Drain beans. In slow cooker, cook soaked beans in water on high for 2 hours. Drain, saving liquid. In slow cooker, combine beans with tomatoes, onion, green pepper, garlic, salt, oregano, and rosemary. Add 2 cups of reserved liquid. Cover and cook on low for 8 to 10 hours*. Turn control to high; add mozzarella and Romano cheeses. Cook, uncovered, on high for 15 to 20 minutes. Turn heat off; let stand a few minutes before serving to let beans absorb some of the juice.
