Mix butter, confectioners sugar, and peppermint extract thoroughly. In separate bowl, stir together flour and salt. Blend into butter and sugar mixture. Add food coloring, if desired, and mix until evenly distributed throughout. Drop by teaspoonfuls on ungreased baking sheet (cookies do not spread). Bake about 8 minutes, or until set but not brown. While cookies are still warm, dip in additional confectioners sugar OR colored sanding sugar.
