It's Slow Cooker Summer! This week I'm making easy slow cooker dinners for two people. I'm testing out three small slow cooker recipes from Fix it and Forget it Cooking for Two. Place into a greased slow cooker. Add rest of ingredients except hot dogs and mix well. Add hot dogs on top and heat for 2 to 3 hours on Low. Serve in hot dog buns. CREAMY CHICKEN FILLING (pg 207) 1 1/2 to 2 tsp oil 1/2 tsp cumin 1/2 tsp chili powder 1/2 tsp garlic powder 1/2 tsp onion powder 1/2 tsp salt 1/4 tsp oregano 1/4 tsp smoked paprika 1/2lb boneless skinless chicken, cut into chunks 1 Tbsp water 2oz cream cheese 1/4c salsa Mix all spices with the oil and rub on the chicken. Put the water in the bottom of the crock and add chicken. Cover and cook 4 to 6 hours on low, depending on the size of the chicken pieces. When cooked through, shred the chicken and add the cream cheese and salsa. Let cream cheese melt for about 10 minutes. Mix together. This is a great filling for tacos or enchiladas. BREAKFAST IN A CROCK (pg 15) 1 1/2c shredded frozen hashbrowns 1/2c diced cooked ham 1/4c diced onion 1/2c shredded cheddar cheese 4 eggs 2 Tbsp milk 1/4 tsp salt 1/4 tsp onion powder 1/4 tsp garlic powder dash of hot sauce Spray crock with nonstick spray. Spread the hash browns evenly across the bottom of the crock, followed by a layer of the ham, then the onion, then the cheese. In a bowl, whisk together the eggs, milk, salt, onion powder, garlic powder, and dash of hot sauce. Pour this over the contents of the crock.
