It's time for some retro baking! I'm trying out three vintage cookie recipes from Betty Crocker...only this time they're chocolate Christmas cookies. Stir in buttermilk and vanilla. Stir together flour, baking soda, and salt; blend in. Mix in nuts (if using). Chill dough for at least 1 hour. Heat oven to 400 degrees. Drop rounded teaspoonsful of dough about 2" apart on ungreased baking sheet. Bake 8 to 10 minutes or until no imprint remains when touched lightly. If desired, froshed cooled cookies with Marie's Chocolate Icing. Marie's Chocolate Icing (I doubled this recipe!) 1 Tbsp butter 1oz unsweetened chocolate 1 1/2 Tbsp warm water 1c sifted confectioners' sugar Melt butter and chocolate in a double boiler. Blend in warm water. Beat in confectioners' sugar until icing spreads easily. COOKY-CANDIES (pg 38) 1c butter or margarine 3/4c sifted confectioners' sugar 1 Tbsp vanilla 2c flour 3/4 tsp salt 1/4c rolled oats 1/2c semi sweet chocolate pieces 1/4c milk sprinkles, coconut, chopped nuts etc for decorating Heat oven to 325 degrees. Mix butter, sugar, and vanilla well. Stir flour, salt, and rolled oats into butter mixture. Shape teaspoonfuls of dough into rounds, balls, crescents, triangles, and bars. Bake on ungreased baking sheet 20 to 25 minutes, or until golden around edges (Watch baking time. These are easily overbaked). Cool. Melt chocolate; add milk; blended until smooth. Dip cookies, rounded side down, in chocolate; then dip in sprinkles, coconut, chopped nuts, or whatever you choose to use for decoration. CHOCOLATE YUMMIES (pg 115) 6oz semi sweet chocolate pieces 1/3c butter or margarine 16 large marshmallows 1/2 tsp vanilla 1c flaked or shredded coconut 2c rolled oats (quick or old fashioned) Melt chocolate pieces, butter, and marshmallows in double boiler; stir until smooth. Remove from heat (Chocolate-butter-marshmallow mixture may separate but will hold together when rest of ingredients are added). Stir in vanilla, coconut, and oats. Mix thoroughly. Drop by teaspoonfuls on waxed paper.
