Add chopped onion and celery and cook over low heat until soft - about 5 to 7 minutes. When the onions and celery are soft, add the chicken broth, the rest of the vegetables, salt, pepper, and basil. Mix and bring the soup to a boil. Turn the heat down to medium. Boil gently to cook the vegetables - about 15 minutes. Pour the soup into a blender and blend on low speed until very smooth. This can be done in batches if needed. Pour back into the saucepan. Stir in the milk. Heat over medium but don't let the soup boil. Ladle into soup bowls and sprinkle with sliced green onion. CREAMY BUTTERSCOTCH PUDDING (pg 43) 1c firmly packed brown sugar 2Tbsp cornstarch 1/4tsp salt 2c milk 2 egg yolks 2Tbsp butter 1tsp vanilla Combine the brown sugar, cornstarch, and salt in a medium saucepan. Gradually stir in milk. place the saucepan over medium heat. Cook and stir the mixture until it is thick and bubbling - about 10 to 15 minutes. Stir and cook for 2 more minutes, then take the saucepan off the heat. Dip a measuring cup into the hot mixture and take out about 1 cup. Very slowly stir the cup of hot mixture into the egg yolks. Then stir the hot egg yolk mixture into the large saucepan. Stirring constantly, cook over medium heat for 2 more minutes. Take the saucepan off the heat and add the butter and vanilla. Stir until the butter melts. Pour the pudding into a serving bowl. To keep a skin from forming on the top, carefully place a piece of plastic wrap over the hot pudding and let it cool - about 1 hour. Remove the plastic wrap and spoon the pudding into small bowls. COWCUMBER BOATS (pg 9) 1/3c elbow macaroni (uncooked) 7oz canned tuna 1 medium carrot 1 medium celery stalk 1/3c mayonnaise 2Tbsp lemon juice 1/2tsp salt pinch of pepper 3 medium cucumbers 1. Cook macaroni according to package instructions. drain and put into a medium mixing bowl. 2. Drain tuna and add to the macaroni. 3. Wash and peel the carrot and grate it into the bowl. Wash and dry the celery and chop it into tiny pieces. Add it to the macaroni, tuna, and carrot. 4. Add mayonnaise, lemon juice, salt, and pepper to the bowl. Mix with a fork. 5. Peel the cucumber and cut off the ends. Scoop out and discard the seeds. 6.
