Stir in water and rice mix. Bring to boiling; cover. Simmer 15 minutes. Stir in chicken, artichoke hearts, and mushrooms. Cover; simmer 10 minutes more. Serves 4. SPICY CHILI MAC (pg 11) 1lb ground beef (I used ground turkey) 3/4c chopped green pepper 1 - 16oz can diced tomatoes 1 - 15 1/2oz can red kidney beans 1 - 8oz can tomato sauce 2Tbsp Mexican Seasoning Mix (see recipe below) 1 bay leaf 1c uncooked elbow macaroni 1/2c water 1 1/4tsp salt In skillet cook meat and pepper until meat is browned. Drain fat. Stir in undrained tomatoes, undrained kidney beans, tomato sauce. Mexican Seasoning.bay leaf, 1/2c water, and 1 1/4tsp salt. Bring to boiling; add macaroni. Cover; simmer, stirring often, 15 to 20 minutes or until macaroni is done. Remove bay leaf. Makes 6 servings. MEXICAN SEASONING MIX (pg 90) 1/3c dried minced onion 1/4c dried parsley flakes 1Tbsp instand chicken boullion granules 1Tbsp chili powder 2tsp crushed red pepper flakes 1tsp dried oregano 1/4tsp garlic powder Combine all ingredients. Store in an airtight container. Shake or stir thoroughly to mix ingredients before measuring. Makes 3/4c mix. MACARONI-CHEESE SOUP (pg 31) 1 - 10oz package frozen mixed vegetables 1 7 3/4oz package macaroni and cheese dinner mix 1/4c butter 3Tbsp all purpose flour 2 - 13 3/4 cans chicken broth 1c beer 1 1/2c diced fully cooked ham Thaw vegetables in strainer under hot running water. In large saucepan cook the macaroni from the dinner mix in boiling salted water until tender; drain and set aside. Meanwhile, in another saucepan melt the butter. Blend in the flour and the cheese sauce package from the dinner mix. Gradually stir in the chicken broth and beer. Add thawed vegetables and ham. Cook and stir until thickened and bubbly. Stir in the cooked macaroni.
