Mix together until crumbly. Pack half into a 9 x 9 inch pan. Spread cranberry sauce over top. Sprinkle with remaining crumb mixture. Press down with your hand. Bake in a 350 oven for 35 to 40 minutes until it's a rich golden brown. Makes 36. BUTTERSCOTCH COCONUT SQUARES (pg 27) 1/4c butter 1/2c butterscotch chips 1 tsp vanilla 1 egg 1/4 tsp salt 1c coconut 1/2c chopped walnuts 2c graham cracker crumbs Melt butter and butterscotch chips over low heat, stirring constantly. Add rest of ingredients. Stir well. Pack into greased 9 x 9 inch pan. Frost with icing (below). ICING 2 Tbsp butter, softened 1c confectioner's sugar 1 Tbsp custard powder 1/2 tsp vanilla 4 tsp milk Blend all together adding a bit more icing sugar or milk if needed. Spread over bottom layer. Chill well, covered, for several hours in refrigerator. Cut into 36 squares. Variation: Substitute semisweet chocolate chips in place of butterscotch chips. MIDNIGHT MINTS (pg 13) 1/2c butter 1/4c granulated sugar 5 Tbsp cocoa 1 egg, beaten 1 3/4c graham cracker crumbs 1/2c chopped walnuts 3/4c fine coconut 1/3c butter 3 Tbsp milk 1 tsp peppermint flavoring 2c confectioner's sugar Green food coloring 2/3c semisweet chocolate chips 2 Tbsp butter BOTTOM LAYER: Combine first amount of butter, first amount of sugar and coco in a saucepan. Bring slowly to a boil. Stir in egg to thicken. Remove from heat. Stir in crumbs, nuts, and coconut. Pack very firmly into greased 9 x 9 inch pan. SECOND LAYER: Combine second amount of butter, milk, peppermint flavoring, and confectioner's sugar in bowl. Beat together well. Tint a pretty green. Spread over first layer. THIRD LAYER: Melt chips and third amount of butter in saucepan over low heat or over hot water (I did this in the microwave). Spread over second layer. Chill and store covered in refrigerator. This will keep well and will also freeze well.
