Beat until fluffy. Fold in egg and 1/4c coconut. Spoon into buttered 2 quart casserole. Sprinkle with remaining coconut. Bake at 350 for 25 minutes. CORN CUSTARD SCALLOP (pg 460) 2 slices bacon, diced 1/4c finely chopped green pepper 1Tbsp chopped onion 1lb can of cream style corn 2 eggs, slightly beaten 1/2c evaporated milk 1/4c fine dry bread crumbs 1tsp sugar 1/2tsp salt paprika Fry bacon in skillet until crisp. Drain on absorbent paper. SautΓ© green pepper and onion in bacon drippings until tender. Add bacon and all remaining ingredients except paprika. Pour into 1 1/2qt casserole. Sprinkle with paprika. Place in pan containing 1 inch of hot water. Bake at 375 for 35 minutes (I baked for 45 mins). GLORIFIED RICE (pg 215) 1c heavy cream 2Tbsp sugar 1/2tsp vanilla extract 2c cooked rice 2/3c drained crushed pineapple 1 banana, sliced and quartered OR 1c miniature marshmallows maraschino cherries Beat cream in small bowl until stiff; blend in sugar and vanilla extract. Combine rice, pineapple, and banana (I used mini fruit flavored marshmallows). Fold in whipped cream. Spoon into serving dishes; garnish with cherries.
