Cook spinach using package directions. Drain, reserving liquid; add water to make 1 cup. Add spinach liquid and next 5 ingredients to meat mixture. Simmer for 10 minutes. Combine spinach with macaroni and remaining ingredients; spread in 13 x 9 x 2 inch baking dish. Top with meat sauce. Bake at 350 for 30 minutes. Let stand for at least 10 minutes before serving. Serve 8 to 10. STRAWBERRY CREAM (pg 53) 3oz softened cream cheese 2 Tbsp sugar dash of salt 1c whipping cream Fresh whole strawberries (or other fruit of your choice) In small mixing bowl, combine cheese, sugar, salt, and 2 Tbsp of whipping cream; beat until fluffy. Whip remaining cream; fold into cheese mixture. Spoon over berries. GREEN BEANS ALMOND (pg 357) Cook 2 tablespoons of slivered almonds in 2 tablespoons of butter over low heat until golden, stirring occasionally. Remove from heat; add 1 teaspoon lemon juice.
