Add chicken, noodles, pimiento, and parsley. Spoon into 1 quart casserole; sprinkle crumbs on top. Bake in a 375 degree oven for about 25 minutes. Makes 4 servings. CHILI CON CARNE (pg 38) 1/2lb ground beef 1 large onion, chopped 2 cloves garlic, minced 2 to 2 tsp chili powder 1 Tbsp shortening (I omitted this) 1/2 tsp salt Dash cayenne pepper Dash black pepper 1 can (10 1/2 oz) condensed tomato soup 1/2c tomato juice 40oz kidney beans, undrained (just use 3 - 15.5 oz cans if you don't mind a few extra beans) In large skillet, cook beef, onion, garlic, and chili powder in shortening until meat is lightly browned. Blend in remaining seasonings; add soup, juice, and kidney beans. Cover and cook over low heat about 30 minutes; stir often. Remove cover and cook to desired consistency. Makes 6 servings. MACARONI AND CHEESE FAMILY-STYLE (pg 51) 1/2c finely chopped cooked ham 1/4c chopped onion 2 Tbsp butter or margarine 1 can (10 1/2 oz) condensed cream of mushroom soup 1/2c milk 1c shredded sharp Cheddar cheese 2c cooked macaroni 2Tbsp buttered bread crumbs In saucepan, lightly brown ham and onion in butter. Stir in soup, milk, and 3/4c cheese. Heat until cheese melts. Blend sauce with macaroni; pour into a buttered 1 1/2qt casserole. Sprinkle remaining cheese and crumbs on top. Bake in a 350 oven for about 30 minutes, or until nicely browned and bubbling.
