Time for another recipe from The Enchanted Broccoli Forest! This time I'm trying The Pumpkin Tureen - a baked pumpkin soup. Dinner in a pumpkin - it's the perfect fall party food! My Greek Pizza video: https://www.youtube.com/watch?v=izsOfNG5sHI&t=2s More recipes by Mollie Katzen: https://www.molliekatzen.com/ How I make croutons: https://bit.ly/45Hf8ac ------------------------------ THE PUMPKIN TUREEN 1 sincere 6 or 7 lb pumpkin (8" diameter) 1c finely minced onion 2 slices rye bread, diced 1/2c (packed) grated Swiss cheese 2tsp prepared horseradish 2tsp Dijon mustard 1 1/2c milk (lowfat or soy ok) 1 to 2c vegetable broth, stock, bouillon, or water 1tsp salt black pepper, cayenne, and nutmeg to taste Rye croutons (optional) 1. Preheat oven to 350. 2. Prepare the pumpkin as though you were going to make a jack-o-lantern, but stop short of carving the face (cut off the top; remove the seeds and stringy stuff). 3. Place onion, bread, cheese, horseradish, and mustard inside the pumpkin. Mix with your hands until well combined. 4. Add milk and broth (as much as will fit - you can adjust the amounts) along with the seasonings. Stir it up. 5. Line the pumpkin lid with a piece of foil, and place it on top. Place the filled pumpkin on an ungreased baking sheet. 6. Bake the pumpkin until tender (about 2 hours). To test for tenderness, remove the lid, and gently stick a fork into the side. It should go in easily. To serve: Scoop deeply to bring up some pumpkin pieces from the sides and bottom along with the soup.
