Spray a 9" by 5" by 3" loaf pan with vegetable spray. Cream shortening, sugar, and vanilla thoroughly. Add eggs, one at a time; beat well after each addition. Sift flour, baking powder, soda, and salt together. Combine evaporated milk and water; stir in vinegar. Add flour mixture alternately with evaporated milk mixture to creamed mixture; blend well after each addition. Turn half the batter into prepared pan. Top with brown sugar-nut mixture. Spread with remaining batter. Bake at 325 for 45 to 50 minutes or until inserted toothpick comes out clean. Makes 1 loaf. GRAPEFRUIT SLUSH (pg 97) 1 medium can grapefruit sections 1c water 1/2c honey Boil all the ingredients for 5 minutes. Cool an freeze in serving dishes or plastic containers. Remove from freezer 15 minutes before serving and scoop into sherbet dishes. Pour ginger ale over all and serve. CHRISTMAS MORN CASSEROLE (pg 108) 6 eggs, slightly beaten 1c shredded cheddar cheese 1tsp dry mustard 1lb pork sausage, browned and drained 1c biscuit baking mix 2c milk 1tsp oregano Mix and pour into a 13" by 9" by 2" casserole dish. Cover and refrigerate overnight. Bake uncovered in preheated 350 degree oven for 1 hour.
