Mix the flour, baking powder, sugar, and salt. Beat the cream and egg with a whisk. Combine both mixtures, until just blended, then add the melted butter, and stir until absorbed. Fold in the blueberries, mixing as little as possible. Spoon the batter into butter muffin tins, filling each slightly more than halfway. Sprinkle the topping on each muffin. Bake in the preheated oven for 25 minutes ( I baked for 20). Serve immediately. ALL IN ONE BREAKFAST (pg 39) 1 egg 2 slices bacon 1 slice bread Cook the bacon in a large skillet. Just before the bacon is completely crisp, separate it so that you can place a piece of bread over two slices of bacon. Cut a circle from the center of bread using a water glass. Drop an egg into the center of each slice of bread. Saute this combination for several minutes. Then, using a broad spatula, turn each bread-bacon-egg section to the other side. Cook for several minutes on that side before serving. This is especially good cooked outdoors, either on a camping trip of a picnic. SCOTTISH PANCAKES (pg 67) 1 1/2c regular or quick cooking oats (uncooked) 2c buttermilk 1 1/2tsp sugar 1tsp baking soda (well rounded) 1tsp salt 1/2c flour 2 eggs Mix the oats and the buttermilk; let stand for 5 minutes. Add the remaining ingredients to the mixture and blend with a whisk until it is relatively smooth.
