Add biscuit mix and beat vigorously for 30 seconds. Stir in the chopped nuts. Line muffin pans with paper bake cups; fill 1/2 full. Combine sugar, flour, cinnamon, and nutmeg. Cut in butter til crumbly. Sprinkle over batter in paper baking cups. Bake at 400 for about 20 minutes or until done. Makes 16 muffins (mine only made 12!) CHEESE FILLED OMELET (pg 35) 8 egg yolks 1/4c all purpose flour Dash of pepper 8 egg whites 1/4c water 1tsp salt 1 recipe Cheese Sauce (recipe below) Combine egg yolks, flour, and a dash of pepper; beat until very thick. Beat whites until frothy; add water and salt; beat until stiff but not dry. Fold yolk mixture into whites, gently but thoroughly. Pile into 2 well greased, hot 8 1/2 by 1 3/4 inch round ovenware cake dishes. Bake at 350 for 15 minutes or until done. Put omelets together, layer cake style, with Cheese Sauce between and on top. Serve at once, cutting into pie shaped wedges with two forks. Makes 6 servings. CHEESE SAUCE (pg 35) 2Tbsp butter 2Tbsp all purpose flour 1/4tsp salt 1c milk 1c shredded sharp Cheddar cheese Melt butter, blend in flour and salt (I cook the flour for 3 to 4 minutes). Add milk; cook and stir until thickened. Add cheese. Stir until melted.
