Mix shortening, 1 1/2c sugar and eggs thoroughly. Blend flour, cream of tartar, baking soda, and salt; stir in. Shape dough in 1" balls. Roll in mixture of 2Tbsp sugar and cinnamon. Place 2" apart on ungreased baking sheet. Bake 8 to 10 minutes. These cookies puff up at first, then flatten out. LEMON SNOWDROPS (pg. 27) 1c butter or margarine 1/2c sifted confectioners sugar 1tsp lemon extract 2c flour 1/4tsp salt Lemon Butter Filling (see below) Heat oven to 400. Cream butter and sugar. Add lemon extract, flour, and salt; mix well. measure level teaspoonfuls of dough; round into balls. Place about 1" apart on ungreased baking sheet. Bake 8 to 10 minutes, or until very lighly browned. Cool. Put together with filling. Roll in additional confectioners sugar. Lemon Butter Filling: Blend 1 egg, slightly beaten, grated rind of 1 lemon, 2/3c sugar, 3Tbsp lemon juice, and 1 1/2Tbsp softened butter in top of double boiler. Cooker over hot water until thick, stirring constantly. Set aside to cool. CHOCOLATE SPRITZ COOKIES (pg 21) 1c butter or margarine 2oz unsweetened chocolate, melted and cooled 1/2c sugar 1 egg 1/2tsp salt 1tsp vanilla 2 1/4c flour Heat oven to 400. Mix butter, unsweetened melted chocolate, sugar, egg, salt and flavoring thoroughly. Work in flour. Using 1/4 of dough at a time, force dough through cooky press on ungreased baking sheet in desired shaped.
