Combine bread crumbs, butter, and sliced or slivered almonds. Set aside. Mix cooked rice with olives. Combine diced turkey with drained mushrooms. Spoon 1/3 of rice mixture into casserole. Add one half of the turkey; repeat and top with remaining rice. Pour white sauce over all. Sprinkle with bread crumb and almond mixture. Bake at 350 for 25 to 30 minutes or until top is crusty and golden brown. Thin white sauce: 1.5Tbsp butter 1.5Tbsp flour 1/4tsp salt 1/4tsp msg dash of pepper a few dashes of Tabasco sauce 1 1/2c milk Melt butter in saucepan. Blend in flour, salt, msg, and pepper. Heat until mixture bubbles. Remove from heat. Stir in milk and Tabasco. Cook, stirring constantly, until sauce thickens. TURKEY HASH (pg 12) 1 1/2c cooked diced potatoes 2 1/2c finely chopped cooked turkey 3Tbsp butter 1/4c finely chopped onions 2Tbsp finely chopped green pepper 1 - 4oz can mushrooms, drained 1/3c broth or thinned gravy 1tsp salt 1/2tsp msg 1/4tsp pepper 2 medium tomatoes, sliced sharp cheddar cheese 1/2c buttered bread crumbs 1/4tsp garlic salt Grease 1 1/2qt casserole. Mix potatoes with turkey and set aside. In a large skillet, melt 3Tbsp butter. Add onions, green pepper, and mushrooms and cook until tender. Stir cooked onions, peppers, and mushrooms into potato mixture. Add broth, salt, msg, and pepper and mix lightly until combined. Spoon mixture into greased casserole. Place tomato slices on top of casserole. Sprinkle with sharp cheddar cheese. Mix garlic salt with buttered bread crumbs and sprinkle on top. Bake at 350 for 30 to 35 minutes, or until crumbs are lightly browned. HAM-CHEESE SCALLOP (pg 47) 4 to 5 medium potatoes (about 1 1/2lbs), washed, peeled, and thinly sliced 1Tbsp flour 2tsp salt 1/2tsp msg 1/4tsp pepper 1c ground, cooked ham 3oz grated cheddar cheese 1 3/4c milk 3Tbsp butter Grease a shallow 1 1/2qt casserole dish with tight fitting lid. In a plastic bag, combine flour, salt, msg, and pepper. Shake to combine. Add potato slices to bag and shake to cover. Layer potato slices, ham, and cheese in casserole dish. Scald milk. Add butter. When the butter as melted, Pour over the potatoes. Bake at 350 for 50 minutes* or until potatoes are tender when pierced with a fork. Turn off heat.
