Add the water and soy sauce, cooking until the liquid has reduced and the onions have absorbed the flavor. In a large mixing bowl, combine the water and vinegar. Add the flour and stir lightly until just incorporated. Fold in the cheese and prepared onions, mixing until evenly distributed. Spoon half of the batter into the prepared pan, spreading it evenly. Dollop pear jam over the batter, then gently top with the remaining batter, smoothing to cover the jam. Bake at 200°F (95°C) for about 55 minutes, or until a skewer inserted into the center comes out with just a few crumbs attached.
