Get Edye's Cookbook on Amazon here - https://amzn.to/3H7Fton E-book Version - https://littlehouseofbeans.com/e-book/ols/products/outdoor-cooking-with-edye-featuring-the-omnia-oven-e-book-version Tools used: Standard-sized Omnia Oven 2L Standard-size silicone pan Ingredients: 1 small yellow onion, chopped 10.5 ounces (298g) can Campbell’s French Onion Soup 14.5 ounces (411g) can chicken or beef broth regular or low-sodium 1 package (4.3 oz, 122g) long grain rice (I used rice a roti brand) 1/4 cup (60g) unsalted butter cut into slices 1lb (454g) pound boneless, skinless chicken breasts or thighs 1/2-inch thick (I used two chicken breasts, cubbed) 1 1/2 cups (170g) shredded cheese mozzarella or an Italian cheese blend 1 ounce (28g) packet Lipton Onion Soup mix 1 cup (60g) French’s Crispy Fried Onions 1 tsp (5ml) Italian seasoning Instructions: In a large mixing bowl, whisk together the sliced onions, French onion soup, onion soup mix, broth, rice, and the seasoning packet included with the rice until well combined. Pour the mixture into a greased Omnia silicone pan. Dot the top with butter, then arrange the chicken evenly over the rice mixture. Sprinkle the cheese and Italian seasoning over the top. Bake at 250–300°F for 45 minutes to 1 hour, or until the rice is tender and the chicken is cooked through. Finish by evenly scattering the fried onion pieces over the top before serving.
