You can halve the recipe for just the muffins or a single cake, or use a maxi pan for one cake without modifying the recipe. Tools used: Regular Omnia oven Omnia muffin mold Sauce pan Sifter Whisk Food Processor (optional) Ingredients: Butterscotch Sauce (Toffee Sauce) ½ cup (113g) unsalted butter - cold and cubed 1 cup (200g) soft light brown sugar 1¼ cups (290g) heavy cream 1 tsp (5ml) vanilla extract Instructions: In a medium saucepan over low-medium heat, combine the butter, brown sugar, and heavy cream. Stir frequently until the mixture reaches a gentle simmer. Continue to simmer for an additional 5 minutes, stirring occasionally, until the sauce thickens slightly. Remove from heat and stir in the vanilla extract. Transfer the sauce to a heatproof bowl or container and set aside. Pudding 1¾ cups or 10oz (285g) pitted dates 1 tsp (5g) baking soda 1¼ cups (300g) boiling water 1¼ cups (150g) all-purpose flour 2 tsp (10g) baking powder ¼ tsp (1.5g) salt ½ cup (100g) soft light brown sugar ½ cup (113g) unsalted butter - melted 2 large eggs - room temperature 1 tsp (5ml) vanilla Instructions: Lightly grease 6-cup muffin trays and silicone baking pan. Place the pitted dates in a food processor or blender. Add the baking soda and pour the boiling water over the dates. Stir to ensure all dates are submerged and let sit for 10 minutes to soften. In a separate bowl, sift together the flour, baking powder, and salt. Set aside. After the dates have soaked, blend the mixture until smooth. Transfer to a large mixing bowl. NOTE: You can hand chop your dates too - if you do that, chop, then steep in a bowl of boiled water, then smash your dates until they’re a relish consistency. Add the brown sugar, melted butter, eggs, and vanilla extract to the date mixture. Whisk until well combined. Gently fold in the sifted dry ingredients using a spatula until just combined. It's acceptable if the batter is slightly lumpy; avoid overmixing. Divide the batter evenly among the prepared muffin trays and baking pan. Bake at 200F for approximately 30 minutes for the muffin molds and 40 minutes for the silicone pan, or until a toothpick inserted into the center comes out clean. Allow the puddings to cool for a few minutes before removing from the pans. Pour your sauce on your muffins or cake. A little whip cream or vanilla ice cream pairs nicely.
