Get Edye's Cookbook on Amazon here - https://amzn.to/3H7Fton E-book Version - https://littlehouseofbeans.com/e-book/ols/products/outdoor-cooking-with-edye-featuring-the-omnia-oven-e-book-version Tools Used: Strainer Omnia Maxi pan 3L with silicone liner or Omnia Maxi pan non-stick 3L Ingredients: 10 ounces (285g) refrigerated cheese tortellini (any type) 1 (15-ounce / 425g) can black beans, rinsed and drained 1 (4-ounce / 113g) can diced green chilies 1 (15-ounce / 425g) can diced tomatoes, with juice 2 cups (200g) shredded Monterey Jack cheese 1 cup (240g) regular sour cream 2 limes – freshly squeezed lime juice 1/2 teaspoon (2g) sugar 1/2 cup (65g) sliced black olives 1/4 cup (4g) chopped cilantro 1/2 teaspoon (1g) ground cumin 1/2 teaspoon (1g) chili powder 1 teaspoon (2g) paprika 1/2 cup (85g) corn – optional Instructions: In a large mixing bowl, combine the black beans, green chilies, diced tomatoes, tortellini and spices. Mix until well combined, then transfer the mixture to the prepared greased non-stick Omnia maxi dish. In a separate bowl, whisk together the sour cream, fresh lime juice, and sugar. Spread this mixture evenly over the tortellini and bean mixture. Sprinkle the top with shredded cheese, followed by sliced olives, and cilantro. Bake at 250F/121C for about 35-40 minutes, or until the cheese is melted, bubbly, and golden brown around the edges. Let the casserole rest for 10 minutes before serving. Garnish with extra cilantro, if desired.
