(340g) Bag Frozen Shrimp 1 package Puff Pastry Dough Sheets 2 Potatoes, chopped 2 large Carrots, chopped 2-3 Celery Stalks, chopped ¼ cup (40g) green onions/ scallions or a yellow onion 4 oz. (115g) Cream Cheese ¼ cup (25g) grated parmesan cheese ½ oz. (15g) Flour 3 Garlic Cloves, minced ¼ cup (60ml) heavy cream ¼ cup (60ml) chicken or vegetable stock or broth 1 egg 2 tsp. (10g)Old Bay Seasoning 2 tsp. (10g) Paprika 2 tbs (30g) butter, salted 2 tbsp (30ml) oil of choice Salt/Pepper to taste. Instructions: Place a large non-stick pan over medium-high heat and add the butter and oil. Sauté the potatoes for 5-10 minutes until they are soft. Add the celery, carrots, and onions, stirring often, and cook until softened. Stir in the garlic and shrimp, mixing well. Sprinkle in the flour and stir until fully incorporated with no dry flour remaining. Pour in the stock, heavy cream, cream cheese, and Parmesan cheese, bringing the mixture to a simmer. Remove the pan from heat and let it cool slightly. Roll out one sheet of pastry dough to roughly match the size of your pan. Use the upside-down Omnia as a guide to cut the pastry circle. Use a mug to press a round cut-out in the center of the dough, allowing it to fit through the center of the Omnia. Carefully cut out the shape. Poke a few holes with a fork in the pastry. Place the dough on the bottom of a greased pan, using the leftover dough to build up the walls around the perimeter and the center. Pour the shrimp mixture onto the dough. Roll out the second pastry dough layer and place it on top of the mixture. Beat one egg and brush it over the top pastry layer. Bake at 225°F for about 1 hour, or until the crust is golden.
