Tools used: Regular Omnia oven Omnia silicone mold Hand mixer Ingredients: Cake 1 cup or 2 sticks (225 g) butter 2 tbsp (25g) oil 1 cup (225g) sugar 3 eggs 3 tbsp (40g) cognac 1 cup (120g) all-purpose flour ½ cup (75g )potato starch or cornstarch 1½ tsp baking powder 1 tsp vanilla extract 1g saffron 4oz (113g) Almond paste ½ cup (50g) Graham crackers Icing 1 egg white 2 tbsp (30g) milk or cream 1 ⅔ cup (200g) powdered sugar Instructions: Day 1 Whisk the eggs and saffron together until well combined. Cover and refrigerate overnight to allow the flavors to meld. Day 2 Prepare the silicone or non-stick pan by thoroughly buttering it and dusting with graham crackers. In a large bowl, cream together the butter, oil, and sugar until light and fluffy. Gradually whisk in the saffron-infused eggs, adding them in three parts. Ensure each addition is fully incorporated before adding the next. Stir in the cognac until the mixture is smooth and well combined. In a separate bowl, combine the all-purpose flour, potato starch, baking powder, and vanilla sugar. Gently fold the dry ingredients into the wet mixture, stirring just until no streaks of flour remain. Spoon half of the batter into the prepared pan, smoothing the surface. Tap the pan firmly on the counter to release any trapped air bubbles. Crumb the almond paste evenly over the first layer of batter, then gently spread the remaining batter over the top to cover it completely. Bake at 200F for about 35-40 minutes or until a toothpick inserted into the center comes out clean. Glaze and Final Touches While the cake cools slightly, prepare the glaze by whisking together the egg white, milk, and powdered sugar until smooth. Once the cake is warm but no longer hot, gently tap the pan on the counter to loosen it, then carefully invert the cake onto a cooling rack. Pour the glaze over the cake, ensuring it is evenly coated. Allow any excess glaze to drip off. Let the cake rest at room temperature overnight. This resting time enhances the texture and flavor.
