Tools used: Regular Omni Pan 2L Omnia silicone muffin mold (or individual silicone muffin cups) Ingredients: 2 1/2 cup (250g) old-fashioned rolled oats 1 1/2 cup (360ml) almond milk 1/3 cup (80ml) maple syrup or honey 2 tbsp (28g) coconut oil , melted 1 tsp (5ml) vanilla extract 1 tsp (2.5g) cinnamon 1 tsp (2.5g) cardamom 1 tsp (4g) baking powder 1/4 (1.5g) tsp salt 1/2 cup (60g) fresh or frozen raspberries Icing sugar (optional to sprinkle) Instructions: In a mixing bowl, combine the oats, almond milk, maple syrup, melted coconut oil, vanilla extract, cinnamon, cardamom, baking powder, and salt. Stir until well blended. Cover and refrigerate overnight to allow the oats to soak. Grease the Omnia muffin insert. Divide the mixture evenly among the cups and top each with 3–5 frozen raspberries. Bake at 200F-250F (107C-121C) for 45-55 minutes, or until the muffins are golden and set. Transfer to a cooling rack. Dust with icing sugar before serving, if desired.
